- 2 balls of burrata cheese (about 8 oz each)
- 2 cups cherry tomatoes, halved
- 4 cups fresh arugula
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic glaze or balsamic vinegar
- Salt and freshly ground black pepper, to taste
- Optional: 1 tablespoon fresh basil, torn
- Optional: Crusty bread or crostini for serving

1. Prepare the Cherry Tomatoes
- In a mixing bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, a pinch of salt, and freshly ground black pepper. Set aside to let the flavors meld.
2. Assemble the Salad
- Arrange the arugula on a serving platter or individual plates. Place the burrata balls in the center.
3. Add the Tomatoes
- Spoon the seasoned cherry tomatoes over and around the burrata and arugula.
4. Finish with Balsamic and Olive Oil
- Drizzle the balsamic glaze or balsamic vinegar over the salad, focusing on the burrata. Follow with the remaining olive oil.
5. Garnish and Serve
- Sprinkle with fresh basil if using, and add extra salt and pepper to taste. Serve immediately with crusty bread or crostini on the side.
