  • 4 large eggs
  • 4 slices of crusty bread (sourdough, ciabatta, or baguette)
  • 23 tablespoons high-quality extra-virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Fresh herbs (parsley, thyme, or chives) for garnish

1. Boil the Eggs

  1. Bring a medium saucepan of water to a boil.
  2. Gently lower the eggs into the boiling water using a spoon.
  3. Cook for 6-7 minutes for soft, jammy yolks.
  4. Transfer the eggs to a bowl of ice water and let cool for 1-2 minutes. Peel carefully.

2. Prepare the Bread

  1. Lightly toast the bread slices until warm and crisp.
  2. Drizzle each slice with olive oil and sprinkle with a pinch of salt.

3. Assemble and Serve

  1. Plate the peeled soft-boiled eggs alongside the olive oil-drizzled bread.
  2. Sprinkle the eggs with salt and freshly ground black pepper.
  3. Garnish with fresh herbs if desired.
