For the Dough:

  • 3 1/4 cups (400 g) 00 flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon active dry yeast
  • 1 1/4 cups (300 ml) warm water (about 100°F/37°C)
  • 1 tablespoon olive oil

For the Toppings:

  • 1 cup (250 ml) canned San Marzano tomatoes, crushed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano (optional)
  • 8 oz (225 g) fresh mozzarella, sliced
  • Fresh basil leaves
  • Additional olive oil for drizzling

1. Make the Dough

  1. Activate the Yeast:
    • In a small bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix the Dough:
    • In a large mixing bowl, combine the 00 flour and salt. Add the activated yeast mixture and olive oil. Mix until a rough dough forms.
  3. Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Let it Rise:
    • Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.

2. Prepare the Toppings

  1. In a bowl, mix the crushed tomatoes, olive oil, salt, and oregano (if using). Set aside.

3. Preheat the Oven

  1. Preheat your oven to its highest temperature (typically 475-500°F/250-260°C). If you have a pizza stone, place it in the oven to heat.

4. Shape the Dough

  1. Divide the dough into two portions. Roll out each portion into a thin circle or oval on a floured surface, about 12 inches in diameter.
  2. Transfer the dough to a sheet of parchment paper or a floured pizza peel.

5. Assemble the Pizza

  1. Spread a thin layer of the tomato sauce over the dough, leaving a 1-inch border around the edges.
  2. Evenly distribute the mozzarella slices over the sauce.
  3. Add a few fresh basil leaves and drizzle with olive oil.

6. Bake

  1. Slide the pizza onto the preheated pizza stone or a baking sheet.
  2. Bake for 7-10 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

7. Serve

  1. Remove the pizza from the oven and drizzle with a touch more olive oil if desired. Slice and serve immediately.
