- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon active dry yeast
- 1 1/4 cups (300 ml) warm water (about 100°F/37°C)
- 1 tablespoon olive oil
For the Toppings:
- 1 cup (250 ml) canned San Marzano tomatoes, crushed
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano (optional)
- 8 oz (225 g) fresh mozzarella, sliced
- Fresh basil leaves
- Additional olive oil for drizzling

1. Make the Dough
- Activate the Yeast:
- In a small bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Mix the Dough:
- In a large mixing bowl, combine the 00 flour and salt. Add the activated yeast mixture and olive oil. Mix until a rough dough forms.
- Knead the Dough:
- Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Let it Rise:
- Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for 1-2 hours, or until doubled in size.
2. Prepare the Toppings
- In a bowl, mix the crushed tomatoes, olive oil, salt, and oregano (if using). Set aside.
3. Preheat the Oven
- Preheat your oven to its highest temperature (typically 475-500°F/250-260°C). If you have a pizza stone, place it in the oven to heat.
4. Shape the Dough
- Divide the dough into two portions. Roll out each portion into a thin circle or oval on a floured surface, about 12 inches in diameter.
- Transfer the dough to a sheet of parchment paper or a floured pizza peel.
5. Assemble the Pizza
- Spread a thin layer of the tomato sauce over the dough, leaving a 1-inch border around the edges.
- Evenly distribute the mozzarella slices over the sauce.
- Add a few fresh basil leaves and drizzle with olive oil.
6. Bake
- Slide the pizza onto the preheated pizza stone or a baking sheet.
- Bake for 7-10 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
7. Serve
- Remove the pizza from the oven and drizzle with a touch more olive oil if desired. Slice and serve immediately.
