Focaccia Bread Recipe (Using 00 Flour)

Ingredients (Makes 1 large loaf)

  • 3 1/4 cups (400 g) 00 flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups (300 ml) warm water (100°F/37°C)
  • 2 tablespoons olive oil (plus extra for greasing and drizzling)
  • Coarse salt and fresh rosemary for topping (optional)

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, thinly sliced
  • Juice and zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • Optional: A pinch of red pepper flakes for a bit of heat

  1. Prepare the Dough
    • In a small bowl, dissolve the sugar and yeast in warm water. Let sit for 5-10 minutes until foamy.
    • In a large mixing bowl, combine the 00 flour and salt. Gradually add the yeast mixture and olive oil, mixing until a sticky dough forms.
  2. Knead the Dough
    • Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.
  3. Shape the Dough
    • Preheat your oven to 425°F (220°C).
    • Grease a baking sheet or pan with olive oil. Spread the dough out evenly, about 1/2-inch thick.
    • Use your fingers to create dimples in the surface of the dough. Drizzle with olive oil and sprinkle with coarse salt and rosemary (if using).
  4. Bake
    • Bake for 20-25 minutes, or until golden brown and crisp. Let cool slightly before slicing.
  5. Grill the Focaccia
    • Slice the focaccia into thick strips. Lightly brush with olive oil and grill on a hot grill or grill pan for 1-2 minutes per side until lightly charred.

  1. Cook the Green Beans
    • Bring a large pot of salted water to a boil. Add the green beans and cook for 4-5 minutes, until tender-crisp.
    • Drain and transfer to a bowl of ice water to stop the cooking and preserve their color. Drain and pat dry.
  2. Prepare the Garlic Oil
    • In a small skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 1-2 minutes. Remove from heat.
  3. Toss the Salad
    • In a large bowl, combine the green beans, garlic oil, lemon juice, and zest. Season with salt, pepper, and red pepper flakes (if using). Toss well to coat.
  4. Serve
    • Transfer to a serving dish and garnish with fresh parsley. Serve alongside grilled focaccia.
