- 1 1/2 pounds fresh calamari (squid), cleaned and cut into rings
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup dry white wine
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
- Optional: Crusty bread or pasta for serving

- Prepare the Calamari
- Rinse the calamari under cold water and pat dry with paper towels. Cut into rings if not already done.
- Sauté Aromatics
- Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes. Add the garlic and red pepper flakes (if using), cooking for another 1-2 minutes until fragrant.
- Deglaze with Wine
- Pour in the white wine and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Add the Tomatoes and Seasonings
- Stir in the diced tomatoes with their juice. Add the oregano, salt, and pepper. Reduce the heat to low and let the sauce simmer for 10 minutes, allowing the flavors to meld.
- Cook the Calamari
- Add the calamari rings to the skillet, stirring gently to coat them in the sauce. Cook for 5-7 minutes, or until the calamari is tender. Avoid overcooking, as calamari can become rubbery.
- Garnish and Serve
- Sprinkle with fresh parsley and serve immediately with crusty bread for dipping or over pasta for a heartier meal.
