  • 2 balls of burrata cheese (about 8 oz each)
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh arugula
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze or balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tablespoon fresh basil, torn
  • Optional: Crusty bread or crostini for serving

1. Prepare the Cherry Tomatoes

  • In a mixing bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, a pinch of salt, and freshly ground black pepper. Set aside to let the flavors meld.

2. Assemble the Salad

  • Arrange the arugula on a serving platter or individual plates. Place the burrata balls in the center.

3. Add the Tomatoes

  • Spoon the seasoned cherry tomatoes over and around the burrata and arugula.

4. Finish with Balsamic and Olive Oil

  • Drizzle the balsamic glaze or balsamic vinegar over the salad, focusing on the burrata. Follow with the remaining olive oil.

5. Garnish and Serve

  • Sprinkle with fresh basil if using, and add extra salt and pepper to taste. Serve immediately with crusty bread or crostini on the side.
